A quick & easy Keto salad recipe from the Evolve180 kitchen

 

Ingredients (4 Servings)

 

• 2/3 cup red onion, sliced in rings and quartered
• 1 cup Roma or Cherry tomatoes, diced
• 1 cup English cucumber, quartered and sliced
• 1 cup green bell pepper, diced
• 1/2 cup pitted Kalamata olives, halved
• 2 tbsp EV olive oil
• 8 oz Crumbled feta cheese
• 1/2 tsp salt + a pinch for topping
• 1/4 tsp black pepper + a pinch for topping
• 1-2 tbsp red wine vinegar (to taste)
• 2 tsp dried oregano

 

Instructions

 

1) Mix Olive Oil, Vinegar, salt, pepper and oregano well, and toss with the prepared vegetables.

2) Top with feta cheese and a pinch of salt and pepper.
