# 1: New York-Style Keto Cheesecake
Ever since the Greeks invented cheesecakes some 4,000 years ago as a high-energy source for their athletes, this dessert has come a long way.
There are so many kinds of cheesecakes these days other than the traditional, 3-ingredient one. Basque cheesecake for example, with its intentionally burnt texture, Philadelphia Cheesecake, Chicago Cheesecake, Swedish Cheesecake, Japanese `Cotton’ Cheesecake… the list goes on.
But, like most Americans, we at Evolve180 have a special place in our hearts for the New York-style one, and this recipe more than does it for people on a Ketogenic diet program who are aching for that ultra-rich, creamy and larger-than-life experience.
? What We Love About This Recipe:
The no-bake version! Simply replace 1/2 cup of the yogurt with coconut oil or coconut butter, and chill instead of baking.
? Our Top Tip:
The cheesecake (from Chocolate Covered Katie) should seem a little underdone with a soft, jiggly center when you take it out of the oven. By doing this, the texture doesn’t dry out as the dessert cools and firm up, and the moisture evaporates.
? Ingredients:
• 24 oz cream cheese or vegan cream cheese
• 2 cups yogurt, such as coconut milk yogurt
• 2 1/2 tsp pure vanilla extract
• 1 tbsp lemon juice, optional
• 2/3 cup erythritol (sugar or maple syrup also work for non-keto)
• 1/4 cup almond flour

Also, this Cheesecake Factory-inspired recipe by Joe Duff from The Diet Chef is really quick to prepare. Typically, a cheesecake can take several hours from start to finish, but this one can be completed in less than an hour.

11 Quick Tips On How To Make The Perfect Keto Cheesecake – Every Time!
• Unless the recipe specifically asks for fat-free ingredients, go with regular cream cheese and sour cream to get that rich, creamy cheesecake flavor. This applies to both non-vegetarian and Vegetarian Keto diet plans.
• Want to get more creative with the crust? Experiment with different herbs and orange peel..
• To avoid lumps, make sure that all ingredients for your low carb cheesecake is at room temperature. A smooth batter ensures a cheesecake with smooth texture.
• Your pan should be well-greased. If the batter sticks to the sides, it may pull down at the cake and cause it to crack.
• Lining the bottom of the pan with foil helps the cake to slide off smoothly.
• Don’t use store-bought, whipped cream cheese. The air whipped in it interferes with the texture. Go for the rectangular blocks of cream cheese (preferably full fat) instead.
• Don’t overbeat the batter as that makes unnecessary air bubbles and can cause the cake to rise too high and crack while you’re baking it. Combine ingredients at a medium-low speed.
• To prevent drying, place a pan of water in the oven to generate moisture and steam as the cake bakes.
• Don’t poke at the cheesecake to check its doneness. Jiggle it instead. If the edges are firm with a soft center that is still wobbly, it is ready. The heat inside the cheesecake will firm it all up as the cake is cooling.
• Press down firmly on the crust to make sure the layer is dense and well-compacted. Not doing so can make the crust break and get soggy from absorbing all the batter that has seeped into the cracks.
• In spite of your best efforts, if you see cracks on your finished cheesecake, don’t worry. Cover up the blemishes with toppings and no one will know.
