Ingredients (1 Serving)
1) Prepare Veggie chili per package instructions, set to the side to allow it to fully thicken.
2) Wisk 2 eggs in a bowl and add to a small non-stick pan on medium heat. Flip egg mixture once the bottom has solidified. This doesn’t have to be perfect, in fact, this is just as good if the omelet ends up as a scramble.
3) Add the Veggie Chili and fold the omelet in half. Carefully slide the half-moon shaped omelet on to a plate and serve.
