A quick & easy Keto breakfast recipe from the Evolve180 kitchen

 

Ingredients (Serves 2)

 

• 4 large eggs • 1/4 cup ricotta cheese • 4 ounces baked or smoked • Salmon, sliced or crumbled • 1 Tbsp olive oil • 1 cup baby spinach, finely chopped • 3 tablespoons fresh chives or Green onion, chopped • 1/2 teaspoon Salt • Pepper to taste

 

Instructions

1) Preheat oven to 400. 2) Whisk eggs in a mixing bowl. 3) Add remaining ingredients and mix well. 4) Fill 4-6 cups in a silicon mini-muffin baking tray. 5) Bake 12-18 minutes until firm and browned on top. Ready!
